In addition to the economic interest involved in the production of higher value-added products (enzymes, unicellular protein, pigments, antibiotics, etc.), the use of agro-industrial by-products has an impact on the preservation of the environment when considering the development of oriental technologies towards a sustainable transformation of natural resources. The search for low cost raw materials and easy acquisition to be used as fermentable substrates (carbon or nitrogen sources), constitutes one of the most interesting challenges of current biotechnology. For this reason, research aimed at finding alternative farming methods that are economically competitive is of particular importance. In this sense, there are several byproducts of agro-industry that could be used as non-conventional substrates to obtain products of economic interest such as food additives. La biotecnología permite la bioconcersión de resuduos agroindustriales en productos de interés comercial mediante el uso de microorganismos. Además del interés económico que implica para la producción de productos de mayor valor agregado (enzimas, proteína unicelular, pigmentos, antibióticos, etc.), la utilización de subproductos agroindustriales tiene incidencia en la preservación del medio ambiente al considerar el desarrollo de tecnologías orientales hacia una transformación sustentable de los recursos naturales. La búsqueda de materias primas de bajo costo y fácil adquisición para utilizarse como sustratos fermentables (fuentes de carbono o de nitrógeno), cosntituye uno de los retos más interesantes de la biotecnología actual. Por ello, es de especial importancia la investigación dirigida a encontrar medios de cultivo alternativos que sean económicamente competitivos. En este sentido, existen diversos subproductos de la agroindustria que podrían ser utilizados como sustratos no convencionales para la obtención de productos de interés económico como los aditivos alimentarios.
