The general population requires more and more foods that meet quality standards to ensure health care, so that the industrial and technological development today requires a multidisciplinary participation to ensure food production processes, including product certifications. Control engineering is fundamental for optimal performance of production systems as it improves productivity and avoids manual operations by performing the job safely and accurately. The monitoring and control software, the best online tool, meets the tasks of monitoring and control equipment in industrial processes, in addition to storing data that is collected and generated for analysis, allowing for improved production and efficiency, and security costs. This paper presents the development of software that monitors the process that makes the machine cactus dehydration through a screen with a simple graphical interface and stores the information in a file type. CSV, being available for analysis. Using this system can ensure and verify the quality of the product, offering added value to compete in the market and allowing greater opportunity for sales and trading. La población en general exige, cada vez más, alimentos que cumplan con estándares de calidad para asegurar el cuidado de la salud, por lo que el desarrollo industrial y tecnológico en la actualidad requiere de una participación multidisciplinaria para garantizar los procesos de producción alimenticia, alcanzando incluso certificaciones en los productos. La ingeniería de control es preponderante para el funcionamiento óptimo de los sistemas de producción, ya que mejora la producción y evita operaciones manuales, realizándolas de manera segura y con exactitud. El software de monitoreo y control, la mejor herramienta virtual, cumple con las tareas de monitorear y controlar maquinaria en procesos industriales, además de almacenar los datos que se obtienen y generan para su análisis, permiten mejorar la producción, así como la eficiencia, los costos y la seguridad. Este trabajo presenta el desarrollo de un software que monitorea el proceso que realiza la máquina deshidratadora de nopal, mediante una pantalla con una sencilla interface gráfica y almacena la información en un archivo tipo .CSV, quedando disponible para su análisis. Con el uso de este sistema se puede asegurar y comprobar la calidad del producto, ofreciendo un valor agregado para competir en el mercado, lo que permite una mayor oportunidad de venta y cotización.
