These problems bring increased interest in the scientific community in finding new technologies for exploiting them in obtaining high-value products. Within this waste (byproducts) is the sugar cane bagasse and molasses sugar or molasses. In this work we used solutions of hydrolyzed bagasse enriched with yeast extract (10 g / L), Corn Steep Liquor (10 g / L) and a mixture of both in fermentations with L. pentosus. On the other hand was used molasses from sugar cane performing a reversal of the sucrose prior to fermentation with enzyme invertase 4X 1% at pH 6.2 in sterile solutions of molasses 120g / L inoculated with L. rhamnosus and incubated at 41.5 º C and 150 rpm. In both cases, the fermentations were carried out to obtain lactic acid. Los residuos originados en la industria azucarera pueden convertirse en subproductos con cierto valor económico y, a la vez, evitar el impacto al medio ambiente que ocasionaría su incorrecta disposición. La agroindustria cañera tiene la particularidad de que, al diversificarse para la obtención de energía y derivados, produce residuos secundarios a los que hay que darles tratamiento o un adecuado uso para evitar la contaminación del medio ambiente. Dentro de estos residuos (subproductos) se encuentran el bagazo de la caña de azúcar y las melazas o mieles finales. En este trabajo se utilizaron soluciones de hidrolizado de bagazo de caña enriquecidos con extracto de levadura (10 g/L), licores de lavado de maíz (10 g/L) y una mezcla de ambos en fermentaciones con L. pentosus. Por otra parte, se utilizó la melaza de la caña de azúcar, llevando a cabo una inversión de la sacarosa previa a la fermentación con la enzima invertasa 4X al 1 % a pH 6.2 en soluciones estériles de 120 g de melaza/L inoculadas con L. rhamnosus e incubadas a 41.5 ºC y 150 rpm. En ambos casos, las fermentaciones se llevaron a cabo para la obtención de ácido láctico.
